Low-Carb Cloud Bread | Oopsie Bread – Recipe

Another great low-carb bread option is cloud bread (also known as oopsie bread). It’s a multipurpose “bread” that doesn’t have any carbohydrates and can be used in a number of ways. It may be eaten as a sandwich or as a hotdog or hamburger bun. Oopsilicious!

Instructions

  1. Separate the eggs into two bowls, one for the egg whites and the other for the egg yolks.
  2. Whip the egg whites with the salt until stiff. You should be able to flip the bowl over without disturbing the egg whites.
  3. Combine the egg yolks and cream cheese in a large mixing bowl. Psyllium seed husk and baking powder may be added if desired (this makes it more bread-like).
  4. Gently fold the egg whites into the egg yolk mixture, trying to keep the egg whites as airy as possible.
  5. Place as many dollops of the mixture as there are servings in the recipe on a baking sheet coated with parchment paper. With a spatula, spread the circles out to approximately 12 inch (1 cm) thick slices.
  6. Bake for approximately 25 minutes at 300° F (150° C) in the center of the oven, or until brown.

How do you keep cloud bread fresh?

The cloud bread may be kept in the refrigerator for 2-3 days or frozen for up to 3 months. To prevent the bread from sticking together, place a sheet of parchment paper between each slice. You can take as many pieces as you like this way, and you won’t have to defrost them all at once.

Frozen cloud bread may be thawed at room temperature or in the refrigerator. After thawing, toast them for a greater flavor, but you may also reheat them in the oven. Preheat the oven to 300°F (150°C) and toast the cloud bread slices for approximately five minutes on the rack. They’ll be brand new and fresh!

What are some ways to change up the bread recipe?

Because this recipe has little taste on its own, it’s ideal for use as sandwich bread. Various types of seeds may be used to enhance crunch. Poppy seeds, sesame seeds, sunflower seeds, or any other kind of seed may be used.

Before baking the bread, sprinkle it on top. You may replace the cream cheese with flavored cream cheese, mascarpone cheese, or full-fat Greek yogurt. Depending on what you want, the first choice will offer you more taste while the others will give you more fluff.

How about a dollop of cream of tartar?

Cream of tartar may be added to the egg whites while they are being mixed until stiff, but it is not required. It will prevent the cloud bread from inflating by stabilizing the eggs and increasing their heat resistance.

Dessert with bread?

Yes, absolutely! Fill a large cloud bread with a thick layer of keto buttercream, keto custard, or berries and whipped cream. Serve it like a Swiss roll by rolling it up tightly. We suggest using mascarpone cheese instead of cream cheese and eliminating the salt in this variation.
