Good ol’ butter chicken is a simple but delicious curry dish that is loved by many. I make it as often as possible because it’s a great way for me to get some good fats into my system. It’s also a great way to use up leftover chicken, which is a bit of an issue in my house.

Getting the chicken wings ready
You can purchase pre-cut and ready-to-fry chicken wings, but if you have the entire wing, you’ll need to break it down first. It’s simple! All you have to do now is find the joints between the wingette and drumette and dislocate them. Simply cut through the joint with a sharp knife, and you’re ready to go!
If you don’t have tandoori masala, a combination of red chili powder, turmeric, garam masala, and coriander powder may be used instead.
The ideal technique is to bake the chicken wings on a baking sheet with a fitted rack to avoid steaming and cooking in their own juices.
