Italian Keto Turkey Meatballs With Zoodles – Recipe

Zoodles – (zoodles) are zucchinis that have been spiralized and then pureed with a little bit of coconut oil, which makes them a great carb-free replacement for pasta. This recipe has them in the main meatball dish, but they can also be made into a veggie-only meatball, or even chopped and added to a salad or pizza toppings.

It’s difficult to surpass these luscious, handmade turkey meatballs in a rustic sauce of roasted garlic and sun-dried tomato. It’s a soothing and nutritious meal served over al dente pasta with zucchini.

Instructions

    1. In a large mixing bowl, combine the ground turkey, mayonnaise, salt, pepper, and onion powder. Use your hands or a wooden spoon to gently stir the mixture.
    2. Form the meat mixture into 1 (3 cm) pieces of dough by gently moistening your palms with water.
    3. In a large skillet, heat the olive oil over medium-high heat. In a frying pan, equally distribute the meatballs and cook for 2-3 minutes, or until crispy on both sides (you can do this in portions if necessary). With a small spoon, remove the meatballs from the pan and put aside to keep warm. Heat the fat and fluids in the pan over medium-high heat to keep them warm.

Sauce made with tomatoes

    1. Stir the garlic into the pan regularly until it is gently browned. Then add the tomato sauce ingredients and stir to mix. Bring to a boil, then reduce to a low heat. Cook, stirring regularly, for 5 minutes with the lid closed. Stir in the meatballs and cook, uncovered, for another 2-3 minutes, or until the sauce has thickened. Remove it from the equation.

Cabbage and a variety of sauces

  1. A big pot of water should be brought to a boil. Boil the pasta for one minute before draining it in a colander. Drizzle pasta with olive oil and season with salt and pepper in a serving dish.
  2. Over the spaghetti, place the meatballs and tomato sauce. Garnish with freshly chopped basil and grated Parmesan cheese.
