Are you sick of the same old chicken legs? Give this keto chicken thigh meal an Asian twist. The beef is marinated in a tangy tamari, garlic, and ginger marinade before being roasted to crispiness. This dinner is an exotic vacation without leaving home, served on a bed of coleslaw with a spicy peanut sauce and topped with avocado and lime.

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Whisk together the marinade ingredients in a small bowl. Place the chicken in a ziplock bag and coat it thoroughly with the marinade. Set aside at room temperature for 10 minutes.
  3. Place the skin-side up chicken thighs on a broiler or baking pan. Depending on the size of the thighs, bake for 30-40 minutes, or until the skin is crispy and golden brown and the interior temperature reaches 165°F (74°C). Allow to cool before serving.
