Instant Low-Carb Raspberry Jam – Recipe

After three years of doing the low-carb thing, I have learned that it is not necessarily as easy as it seems. I am a stubborn person and I do not like give up on something I have been doing for long. I also love my food, so giving it up for a few months is not really something I would do. So, I have developed a jam recipe that can be done in a hurry and is low-carb. This jam can be used to make a low-carb dish or used as a spread for a bagel or low-carb toast.

I’ve been wanting to make some low-carb raspberries jam for the longest time, and I finally got around to it. I also wanted to do a low-carb version of Pepsin jam, so I also made some of that  that I’ll also post here.

Looking to make homemade raspberry jam for your holiday table? Here’s a simple recipe that will yield a tasty jam in under 10 minutes. To make it, you’ll combine raspberries, sugar, lemon juice, and some powdered pectin. While the jam cooks, you’ll add some ginger and lemon zest to flavor the jam.

Raspberry jam with a low carb count

There is such a thing as low-carb gridlock! And we’re excited to show you how to do it. A wonderfully thick spread made with naturally sweet raspberries, chia seeds, and a touch of vanilla. What’s more, you know what? It has approximately 10% of the carbs found in conventional jam.

Instructions

  1. In a glass, combine the chia seeds and water. Allow them to cool for a few minutes.
  2. With a hand blender, purée the raspberries and vanilla.
  3. Serve with pancakes, chia pudding, or oatmeal in a glass jar.

You may use frozen berries, but defrost them first for optimum results. Strawberries, blueberries, blackberries, currants, cranberries, or fruits like chopped mango or kiwi may all be used to create chia jam.
